Should we grade our Presidents
the way we grade our beef?
“Prime” is the best.
The next lower is “choice”
but that doesn’t always apply.
The bottom is “select”
but we don’t always.
And then there’s
super dooper
costs outrageously
beyond most budgets
“wagyu”
where they massage the meat
while it’s still alive.
We like our steak
medium rare,
showing blood,
easy to chew,
just enough fat
for flavor,
aged just enough
before serving.
